On a whim, I made up a granola recipe a few days ago when I was craving peanut butter. It turned out so good that over half our family ditched our previous favorite “maple pecan granola” in favor of this recipe as our new favorite. We still eat it with milk (dairy or non-dairy) and fruit…or parfait style, layered with yogurt and berries. I hope you enjoy it as much as we did!
Peanut Butter Granola
1 cup peanut butter (or almond butter if you want to be healthier)
1 cup honey
2 Tbsp. vanilla extract (optional)
2-4 tsp. cinnamon
1-2 tsp. salt (use more if your nut butter is unsalted, use less if your nut butter is salted)
8 cups oats
Whisk together the peanut butter, honey, vanilla (if using), and spices until well combined. Then, stir in the oats until well coated. Spread the mixture evenly onto a baking sheet and bake at 375 degrees for 20 minutes until golden brown. Cool completely and store in an airtight container for up to one month.
Peanut Butter Pecan Granola Variation: I like adding pecans to this granola recipe, too! I tend to make the recipe as stated above and then just add the pecans to my bowl (since my kids don’t care for them). However, if you want to add pecans to the whole recipe, simply add 1 cup of pecans to the peanut butter/honey/spices at the same time you add the oats. Then, you can continue to bake as directed.
